With Thanksgiving right around the corner, it’s time to look at holiday recipes that will delight your senses without packing on the pounds. And, we have a recipe that is sure to leave your taste buds satisfied! Our Kale and Butternut Squash Stuffing is a healthy twist on a traditional Thanksgiving staple.
Who says holiday stuffing has to be bad for you? We surely didn’t!
You can get all the comforting luster of traditional stuffing without feeling bloated afterward! The best thing about, it isn’t hard to make! You only need 10 ingredients to whip up this holiday treat.
1 pound Italian turkey sausage, casings removed (omit for vegetarian)
1 small butternut squash, cut into 1/2- inch cubes
3 small leeks, halved and thinly sliced
1 teaspoon salt
1 teaspoon pepper
1 bunch kale
1 loaf stale whole-wheat bread, cut into 1/2-inch cubes
2 cups chicken broth (substitute vegetable broth for vegetarian)
Prepare your casserole dish by coating it with 1 tablespoon of olive oil.
Grab a large pot. Warm up 1 tablespoon of olive oil over medium heat.
(optional) Add sausage to the large pot. Brown the sausage and use a wooden spoon to break up the meat.
Add in your butternut squash, leeks, salt, and pepper. You should cook the leeks until they are soft, stir periodically.
Add in your Kale. Cover the pot for 4-5 minutes (until the kale has wilted).
Add 3 tablespoons of olive oil to a separate bowl. Stir in your bread, making sure the oil is evenly distributed.
In that same bowl, whisk in egg and chicken broth. Stir or toss bread mixture around until the liquid is absorbed.
Stir in bread mixture to your large pot.
Place your stuffing (from the pot) into your prepared casserole dish(es).
Bake the stuffing for 40 minutes (or until is lightly browned).
